AFAIK, this is a transcoding issue for Cinecore2.1, not a data rate issue. ProRes requires transcoding in Cinecore 2.1 whereas CinemaDNG does not. If you want 4K60, shoot in RAW, as it requires no transcoding, hence the huge file sizes. Same issue on the X5S. If ProResRAW is soon available on...

Well, the resolution recorded is 3840x2160, so it's full 4K, but no, it's not the full 5.2K of the sensor. However, you're able to record at 60 fps, so there's that!

When in 4K60 the image is recorded pixel-to-pixel from the center of the sensor instead of being downscaled from the full area of the 5.2K sensor. This obviously changes the FOV and results in a 2.7x magnification factor (instead of the usual 2.0x MFT mag factor).

Probably a good reason not to mount the hood. :( If you could mount the hood, you wouldn't be able to add any filters or balance ring, as the combination makes the X5S front-heavy. Best leave off the hood, it's not that useful anyway.

As the previous poster said, there is only an X3 (FC350) DJI profile in Camera RAW to date. Nothing for any MFT lenses, which are not DJI branded; e.g., Olympus Zuiko 12 mm, etc. Perhaps Adobe will update at some future time, but until then, use the manual profile corrections.
